APPLE MUFFINS
(from “ The Wilson Farm Country Cookbook” by Lynne Wilson)

1 ½ cup flour
2/3 cup sugar
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
¼ cup butter or marg, softened
1 egg
½ cup milk or cider
1 cup peeled & finely chopped or coarsely grated apple
Streusel Mixture (optional):
1 Tbsp butter, softened
2 Tbsp flour
2 Tbsp dark brown sugar
¼ tsp cinnamon

Preheat oven to 400 degrees.  Grease a muffin tin for 8 large or 12 medium muffins.  Sift the flour, sugar, baking powder, salt, cinnamon, and nutmeg into a large mixing bowl.  Add the butter, egg and milk or cider and cut them in with a pastry blender or two knives until barely mixed – just long enough to moisten the dry ingredients.  Stir in the apple. Spoon into the prepared pan.  Top with streusel, if desired.  Bake for 20-25 minutes. To prepare the streusel topping, mix the butter, flour, brown sugar, and cinnamon with your fingers or a fork until crumbly.  Make an indentation in the tops of the unbaked muffins.  Place a spoonful of streusel mixture in each.  Bake as above.
