1 1/2 cups bran cereal
3/4 cup half and half
1/2 cup butter, melted
1/3 cup honey
2 medium ripe (1 cup) bananas
1 egg, slightly beaten
1 1/4 cups flour
1 Tbs. baking powder
1/2 tsp. salt

Stir together bran cereal and half & half in large bowl. Let stand 5 minutes. Add butter, brown sugar, honey, bananas and eggs to bran cereal mixture; stir until well mixed. Stir in flour, baking powder and salt just until moistened. Spoon batter evenly into 12 paper-lined or greased muffin cups. Bake at 375 degrees, 15-18 minutes.

VARIATION: Banana Honey Bread - Prepare batter as directed. Spoon batter evenly into 3 (5 1/2x3-inch) greased mini loaf pans. Bake at 350F. for 25 to 30 minutes or until lightly browned. 24 servings (3 loaves).
