BLUEBERRY SCONES (from Donna Truren)

2 cups flour
1/3 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup lemon or vanilla yogurt
1 egg, lightly beaten
1/4 cup melted butter
1 tsp lemon peel
1 cup blueberries

1/2 cup confectioner’s sugar
1 Tbs. lemon juice
1/2 tsp lemon peel

Combine dry ingredients. Combine butter, yogurt egg and lemon peel. Stir moist ingredients into dry until just moistened. Fold in berries. Drop onto greased baking sheet.

Bake at 400 degrees, 15-18 minutes. Spread glaze on scones while still warm. Yields 15-18 scones.
