HONEYCOMB OATMEAL LOAF

1 Tbsp shortening
¾ cup chopped pecans
2/3 cup honey
½ cup milk
2 eggs, beaten
1/3 cup vegetable oil
2 ¼ cups flour
1 cup quick oats
1 Tbsp baking powder
1 tsp salt
½ tsp cinnamon

Heavily grease 8 ½ x 4 ½ x 2 ½-inch loaf pan with 1 Tbsp shortening; coat pan with ½ cup nuts. Combine honey, milk, eggs and oil; mix well. Add to combined flour, oats, baking powder, salt and cinnamon, mixing just until dry ingredients are moistened. Spoon into prepared pan; sprinkle with remaining nuts. Bake in preheated moderate oven (350) 55 to 60 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool thoroughly before slicing to serve. Makes one loaf.
