1/2 cup unsalted butter
1 cup sugar
2 eggs
2 cups flour
1 tsp. baking soda
1 (8 oz) container plain yogurt.
1/4 cup chopped pecans optional)
1 tsp. grated orange rind

Topping: 1 Tbs. sugar 1/2 cup orange juice

Cream butter and gradually add sugar at medium speed. Add eggs, beating well after each addition. Combine flour and baking soda, add to butter mixture alternating with yogurt, beginning and ending with the flour mixture. Beat at low speed until blended after each addition. Stir in pecans and orange rind. Fill greased muffin tins 3/4 full.

Mix 1 Tbs of sugar and OJ, spoon on top of each muffin.

Bake at 400 degrees, 18-20 minutes.
