4 cups flour
1 tsp salt
4- tsp baking powder
cup white sugar
cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
2 eggs
cup oil
1 cup milk
2 peaches, pitted & diced

Preheat oven to 400 degrees. Grease 16 muffin cups. Set aside. Combine flour, salt, baking powder, white & brown sugars, nutmeg & cinnamon. Mix these dry ingredients until just combined. Add eggs and oil and with mixer at medium speed; pour milk in gradually, until it is all added. Stir in the diced peaches. Fill muffin cups so that they are very full and domed. Bake 25-30 minutes. Serve with peach preserves.
