RAISIN SODA BREAD

2 cups whole-wheat flour
2 cups all-purpose flour
1 cup quick oats
1 1/2 Tbs. baking soda
1 1/2 Tbs. salt
3/4 cup sugar
2 cups buttermilk
3 Tbs. molasses
2 cups golden raisins

Combine flours, oats, baking soda, salt and sugar. Form a well in the center of the mixed dry ingredients- into the well pour the buttermilk and molasses. Mix until combined. Add raisins and knead them into the dough. Divide dough in half and shape each portion into a round. Transfer rounds to baking sheets and cut a large X on top of each loaf.

Bake at 425 for15 minutes, reduce heat to 325 and bake for 40-45 minutes more.

Can also add seeds for heartier loaves.
