LEMON PECAN SCONES

2 cups all-purpose flour
4 teaspoons baking powder
teaspoon salt
cup sugar
cup or stick butter or margarine
cup chopped pecans
1 tsp finely grated lemon rind
(juice of one lemon plus milk)
(to equal one cup of liquids)

Mix dry ingredients. Cut in butter or margarine until fine. Stir in pecans and lemon rind and mix. Stir in lemon juice and milk and mix gently. Knead for a few minutes and add extra flour if necessary. Place in preheated cast iron skillet and bake 20-25 minutes in 400-degree oven. Cut in wedges.
